I think that was something that I really started thinking about at The Ecology School: meals as a gathering time where stories are shared and memories are made. And thinking about how with your dining table, the story begins before it even comes to your home. And in the global market of wood products, that’s not possible to find. So, I’m kind of looking at what I do as more of a niche. Like your local farm. You can experience the place, you can see where the trees are coming from and there’s a little bit more of a story behind that.
